DIBS recipe Number 3
WOW can you believe this is the beginning of week 3 of Christmas in July???? Anyway Terri aka liltattoo was gracious enough to share this recipe with us. You will need more than one DIBS for this recipe also.
Sandwich size bag-1/2 cup packed brown sugar and 1/4 cup sugar.
Quart size bag-1 tsp cream of tartar,1/2 tsp baking soda, 1/8 tsp salt, and 1 1/3 cups flour.
snack size bag-2 tbsp sugar, 2 tsp unsweetened cocoa, and 1 tsp ground cinnamon.
Here's what she sent me:
Great! Here's my contribution...one of my favorites. I wanted to bake some cookies but try something new. This recipe sounded good and I happened to have all the ingredients on hand. They kind of remind me of a snickerdoodle.
Chocolate Chip Cinnamon Crinkles
1/2 cup butter, softened
1/2 cup of packed brown sugar
1/4 cup + 2 tablespoons granulated sugar, divided
1 egg
1 teaspoon vanilla
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/8 teaspoon salt
1 1/3 cup all-purpose flour
1 cup (6 ounces) semisweet chocolate chips
2 teaspoons unsweetened cocoa
1 teaspoon ground cinnamon
Preheat oven to 400°F. Line cookie sheets with parchment paper or leave un-greased.
Beat butter, brown sugar, ¼ cup granulated sugar, egg and vanilla in large bowl until light and fluffy. Beat in cream of tartar, baking soda and salt. Add flour; mix until dough is blended and stiff. Stir in chocolate chips. Combine remaining 2 tablespoons granulated sugar, cocoa and cinnamon in small bowl.
Shape rounded teaspoonfuls of dough into balls about 1¼ inches in diameter. Roll balls in cinnamon mixture until coated on all sides. Place 2 inches apart on cookie sheets.
Bake 8 to 10 minutes or until firm. Do not over bake. Remove to wire racks to cool.
Hope this recipe works for what you've got planned.
Terri

DIBS Recipe Number Two
Just a recap below you will find the explanation of DIBS and my recipe for Banana Bread which is the biggest DIBS item in my house.
Snack size bag filled with 1 cup sugar
Quart size bag filled with 1 1/2 cups flour, 1 Tbsp baking powder, 1/2 tsp salt, and 3/4 tsp baking soda
The next recipe selected for my DIBS is my Grandmother's recipe for Dream Cookies also known by others as Thumbprint Cookies.
DREAM COOKIES
PreHeat oven to 300 degrees
2 c. flour
1 c. sugar
1 c. shortening
1 tsp. baking powder
1 tsp. vanilla extract
favorite jelly or hersey kisses
DIBS setup
snack size bag- 1 c. sugar
quart size bag- 2 c. flour and 1 tsp baking powder
Cream together shortening and sugar then add vanilla extract. Slowly mix in the dry ingredients (premixed in the quart size DIBS bag) until mixed through. Roll into small dough balls, place on an ungreased cookie sheet, and press thumb into the middle to make a small well in each ball. I fill mine with Smuckers Seedless Strawberry Jam but you can use any kind of jellies or chocolates you desire. Place in a 300 degree oven for about 20 minutes. The larger the cookie the longer they will need to be in for. The bottoms will have a light golden color to them . Place on a cooling rack to cool before eating!!! When my sister puts these on a dish she sometimes sprinkles them with powdered sugar to make them look festive, kind of like snow fell on them!!
I hope you are enjoying the DIBS process!!!

"PRE"paring for DIBS....
DIBS is "Dry Ingredient Bags Setup". These are the dry ingredients of your favorite recipes premeasured and stored in ziploc bags.
This storage method enables you to prepare many recipes months in advance. It does not take long to do and yet will save you precious time during the MOST HECTIC time of the year. I will be using my BANANA BREAD recipe as an example throughout each step.
BANANA BREAD---Preheat the oven to 350 degrees
1/2 cup butter
1 cup sugar
1 1/2 cups sifted flour
1 Tbsp baking powder
1/2 tsp salt
3/4 tsp baking soda
1 egg
1 tsp vanilla or banana extract
3 or 4 large, very ripe bananas
pinch of cinnamon (optional)
Cream the butter and sugar; add the egg. slowly add the dry ingredients (DIBS). mash the 3 or 4 ripe bananas with a fork in a bowl. Add the extract of choice and sprinkle with a pinch of cinnamon. Slowly add the banana mix to the batter and mix completely. Pour into a greased and floured loaf pan and bake in a 350 degree oven for 50-60 minutes. You can also use mini loaf pans for 20-25 minutes.
STEP ONE: To begin you will need to gather up all the recipes you are going to use for DIBS. Next you will have to figure out how many batches of each recipe you want to have "pre"pared for the rest of the year.
STEP TWO: After you have completed step one, you need to disect your recipe according to the method the ingredients are being used. For example the dry ingredients for the banana bread recipe include sugar, flour, salt, baking soda, and baking powder BUT the sugar is used in a separate step to be creamed with the butter. Therefore I need TWO separate bags for this recipe.
STEP THREE: After you have "disected" your dry ingredients for each recipe you will need to take a running inventory to see what you already have in stock. Keep in mind that if the recipe will not be made til December than all the expiration dates need to meet that timeline also. You will also need to figure out the amount and sizes of ziploc bags you will need. As a rule of thumb all of my flour mixture DIBS will easily fit into quart size bags. Any separated sugar for creaming (up to one cup) will fit into snack size bags. Any exceeding a cup can be filled in sandwich size bags.
STEP FOUR: SHOPPING- With prices in the grocery store climbing as much as gas, this preparing with DIBS will hopefully save us money along with time for Holiday Baking. If there are any ingredients you need to buy then get them ASAP. Don't forget to check the expiration dates and to stock up on ziploc baggis (especialy when on sale).
STEP FIVE: Labelng--Label your bags ahead of time. It is much easier to have the ink dry before handling them. I usually label two different ways. The separated sugar for creaming bags are usually labeled by the ingredient name and the amount (1 cup sugar). The "flour/dry" ingredients bags are labeled by recipe name (Banana Bread Dry Ingredients). If I feel it necessary I will also list the date of the earliest expired ingredient in the bag.
STEP SIX: SETUP--Depending on how many bags you are making and how much room you have, you can approach this in two different ways.
1-You can do one recipe at a time, filling all the bags with the same ingredient before moving on to the next needed ingredient. For example if you are making 4 batches of banana bread you will need to line up 4 snack size and 4 quart size bags (labeled). put one cup of sugar in each of the snack size bags and seal. Put 1 1/2 cups flour in each bag, then move on to the baking soda, baking powder, and then the salt.
OR
2-If you have the space and the FOCUSED mind you can line up all the recipe bags for all the recipes you are doing and "have at it". For example you can put all the required flour in all the different recipe bags and then move on to the next popular ingredient. I personally don't have the space for this method on my countertop BUT I will sometimes set up in the dining room and do a marathon fill (one ingredient at a time). Also to avoid confusion I make index cads for the DIBS and place in front of each recipe section of bags on the dining room table. Definitely worth it. DON'T FORGET TO PRESS ALL AIR OUT OF THE BAGS BEFORE SEALING!!!
STEP SEVEN: STORING- I save many boxes from goods bought at warehouses like Sam's Club or any boxes around the house. I then store my DIBS in the boxes and place in my hall pantry so it is in a cool, dark place. IF you have room in your refrigerator or freezer you can store them there also. If my recipe calls for shortening or other "storable" ingredients I make sure that I store them close to my box if it doesn't fit in the box.
STEP EIGHT: CLean up. Wash all your measuring cups and have a cup of tea, coffee, or hot cocoa!!! Remember how quick and easy it was to set everything up at once. Then when you do your bakefest during the holidays you will be SOOO pleased at how easily it went.
JUST REMEMBER- to stock up on key items on sale keeping in mind their expiration dates. ALSO this is a great way to get the kids involved in the holiday baking. They can help hold the bags, pour ingredients, close the bags, etc.... After you have empied the bags, you can save them to restock for the next batch. I usually will refill mine the next week after my bake sessions. It saves money plus they are already labeled anyway....lol
Have a glorious experience with DIBS!!!!!!!!!!!

April continues on...
Yesterday was my niece Princess Harper's 2nd birthday. She lives in NY so I don't get to see her much but I love and miss her dearly. The boys and I called her and sang Happy Birthday. I hope she will remember who I am when I come to visit her when her little brother (my future godson) is born and getting christened. As soon as I get myself and my life more organized I hope to be able to send more pictures and letters to my niece so she doesn't forget me and her cousins as she grows up. Maybe expecting something new in the mail will remind her of us.

April 9th...my saga continues
It is midweek for Spring break week and April has already given me headaches!! I have been to the ER because my back went out again on March 30th and I waited til Ffriday April 4th to call my doctor and of course he wasn't in so I had to go to the ER. The ER cost me $250 (copay) and then another $20 in prescriptions and I am still in major pain. These meds are not working for me. Along with my prescriptions the ER doctor gave me a no work for three days note so I brought it to my boss and she asked if it was my weekend to work and I said Yes (and thought to myself if it wasn't, I wouldn't be bringing this to you) and she looked at the note and then turned to face her computer and said she'll have to see if someone can work my hours and I again thought to myself umm you WILL have to find someone else to cover. I have called out one day in a year of working and that was when my son was home from school because he was puking in the middle of the night. I mean seriously she needs some people skills. I can't believe she is a manager!!! Anyway as of today I am still not doing well and between the meds and the heat lotions nothing has really eased my pain!! I might have to call my doctor tomorrow and see if I can get stronger meds and maybe an MRI. And I seriously need to start looking for another job and look into healthcare for ma nad the boys from the state. And go after my ex for ALL the money he owes me!! I am on a roll and have no reason to stop.....

Approaching April!!!
Wow can you believe April is just around the corner??? No wonder why the first of April is "FOOL's" day....lol How foolish are we to be shocked it's already April??? Have we been so overwhelmed with our day to day issues that we lose ourselves and our time. I have become a victim to this myself and I have come to realize it.
April can not be another wasteful month for me. I really need to figure out a way to do the things that I need to do to make April more productive than March!!!

March 12th 2008!!
First I would like to say Happy Birthday to my cousin Terry!! Okay so Today I was able to see my second cuz AJ and my Great Aunt Hazel!! I can't believe how big Aj is now... He is 28 and I haven't seen him since he was about 8 or so ...and I never realized there is only about 3-4 years between us....lol!!! He sems to be doing well and living in Upstate NY along with his older brother. My Great Aunt looks great....I can't believe she will be 86 in July!!! Anyway not a VERY exciting day today. Didn't find any good deals as others had found at Hallmark and Carlton Cards but I did get a nice cable knit hooded sweater for my nephew on the way (my godson too)and a nice onesie at Baby Gap for really great prices (both came to 14.99). I was also able to get a tub of licoln logs at the Goodwill store her for under $5, which anyone who buys lincoln logs knows that is a GREAT deal so I didn't make out too bad today!!! Tomorrow is Ronnie's second game and we are excited to see how it goes.

Tuesday March 11th 2008
Today is the BIG day!! My Great Aunt Hazel is arriving to Florida from Connecticut!!! My dad just picked her up at the airport in Orlando and my Second Cousin should also be arriving soon. I won't see her til tomorrow but just knowing that she is here is exciting enough!!! I haven't seen my Second Cousin since he was about 8 or 9 years old. This is going to be a GREAT week!!!
My twins played another game tonight and won the game in the last inning. So far we are undefeated!!! I hope they keep it up!!
I have decided that next week I am going to start picking a word of the week and write about my feelings of the word. I am going to choose words that others have chosen for their word of the year at MHH OR a word that "inspires" me. I want to define it as it is incorporated in my life.

Monday March 10th
Yeah!!!! We had NO rain and all three boys played baseball tonight. Both teams played at the same time on oppposite fields. So needless to say I wound up helping with Ronnie's team in the dugout. Which meant I didn't get to see my other two sons play tonight BUT I did get to see their first game and I get to see them play tomorrow night since Ronnie doesn't play tomorrow. The twins won their second game and unfortunately Ronnie lost his first game. I kind of expected that since they missed alot of practices because of the rains and their two games last week were also cancelled. So they haven't played in over a week. They'll get in the swing of things soon enough...I believe!!

Weekend Review
dang I thought I posted yesterday...guess not. Well this was my working weekend for both jobs so I know Ginger will totally understand plus we lost an hour of sleep last night for DST.....ughhh!!! I need this hour back...lol
Anyway yesterday was a busy work day but a quick clean of the church since there was an event going on I could only clean the bathrooms!!! The rains were gone but the chilly wind stayed an extra day. Oh well it's not snow and ice!!
Today I woke up early despite losing an hour of sleep for DST. I made 4 pistachio pies for my brother to bring to work tonight. I did my weekly cleaning of the church (twice on Sundays) and worked my other job from 3-9!! Man those last hours were dragging....I was sooo tired...lol. Then of course the drive home woke me up and it is after 11 and here I am on the computer as usual...lol
The boys' have state tests this week in school so I am glad I am off from my main job til Friday. Tomorrow all my boys have baseball games so hopefully for my ldest the weather will be nice. His last two (and first 2 ) games were cancelled because of the rain. They missed out on 3 practices too with the rains. I hope they have a good game cause this team missed out on a lot of practices!!! I will also see the dentist tomorrow and I know it won't be good. I had root canal done on ne tooth years ago and they only put a temp cap on it. Well the temp cap started to fall apart and now my tooth is literally in 3 pieces but still there standing by the roots. Plus I want my two lower molars taken out ASAP. I had the top nes removed but the bottom ones need to go!! Wish me luck tomorrow!!

Friday March 7th....
Well not for nothing but it is another night of lightning and thunder along with lots of rain!!! In case none of you know, Ocala (my town) has the most lightning strikes in the WORLD!!! So when we get them with storms it is not fun!!!
After work I went to WalMart with the boys before the storm arrived and sure enough while we were about to leave the downpours and thunder started to roar. I quickly went to the self checkout to get out quickly because the other registers had lines. Anyway the kids were getting sooo excited at the self checkout that I had to calm them down and tell them they were getting in my way. In the midst of all that they grabbed all but the last bag...the ground beef for tonight's dinner....uggghhh So needless to say one of my boys suggested bacon and eggs so bacon, eggs, and toast it was!! My twins had 2 helpings of scrambled eggs which means they had 4 eggs each...I will have to put a gas mask on tonight...lol

March 6th and 5 more days...
NOT AGAIN!!!! My poor son's second game was cancelled also!!!! This rain always hits on his practice days and now his first two game days!!! My poor son...lol I guess he'll have to wait til Monday to play...these poor kids will be soooo out of practice by then. I am working the next three days and then off for FOUR!!! I can't wait to be off. My Great Aunt (dad's aunt) is arriving on Tuesday and I can't wait to see her. I don't think she has ever met my boys so I can't wait for them to meet her. I saw my Great Aunt less than 2 years ago at my grandmother's funeral. My boys didn't come with me then so they didn't get to meet her at that time.

5th of March 2008
Wow what a day for Hillary Clinton!! She did what all the experts thought she couldn't!!! She won Texas and Ohio plus Rhode Island last night!! I hope she goes all the way!!!
Tonight my twins had a baseball practice. The weather dropped a little with the sun but practice went well. Tomorrow I return to work for the next 4 days. I did not get much done today because the boys had a half day of school!!! I am still having trouble to get the boys to eat veggies. Not quite sure what else I can do!! I am taking it one day at a time but it is really aggravating me. I eat all kinds of veggies and this began when we lived with their father (my ex husband) because he doesn't eat veggies. I have been trying over the years and my kids would rather go to bed hungry than eat their veggies. I am going to keep at it and I might try sneaking it in their food as others have suggested BUT I can't control the amounts they consume if it is not given directly!!! Oh well I will have to work on some other solutions while I am at work tomorrow!!!

4th of March and more voting....
I clearly have voted and continue to support Hillary Clinton!!! Tonight is a challenge considering the media is calling for her to quit. But she's my girl and won't quit for the biased press. What happened to the old days when the press was unbiased!!! I am sick and tired of them cutting Hillary off any chance they get. Even at the democratic debates they would cut her off (the commentators AND Obama). I will say this something else I miss during the elections is Peter Jennings reporting, may he Rest in Peace!!!!!

March 3rd or 3-3.....hehe
I am on a roll..lol Tonight was the twins first game of the season and they WON!!!! YEAH!!! Trevor had 3 hits and Travis had one hit. Which is funny because usually Travis has all the hits and Trevor doesn't have any!!! Travis' timing in his swings is off so I have to get him to the batting cages this week to work on that. My oldest son Ronnie has his first game at 7 pm tomorrow night and I look forward to that game also!!! GO BOYS!!!

The tissues continue to be needed...
Between family drama, cleaning out my grandfathers house by going through my grandmothers belongings, and Oprah's Big Give tissues have taken over my day and night. I am too emotionally exhausted to go into details!!!

March is HERE!!!!!!
How busy is your month of March???? Mine is especially busy between St. Patrick's Day, a few birthdays including mine the day before Easter, and Easter of course. But most importantly in 10 days my Great Aunt Hazel will be visiting us from CT. I believe she is about 85 or 86 years old!!! I convinced her to bring any family recipes she has with her so I can add it to our log of recipes that include my grandmother's (her sister). This is EXTREMELY exciting for me!!! I can't wait for her to get here and she will be here for 2 weeks including all the above listed fun filled events for March. So I am COMPLETELY looking forward to bringing in MARCH!!!!

The Final days of February
So normally the 28th is the last day of February but this is Leap Year and we get to end on 29. YEAH!!!! Anyway Last night I was too tired to stay on the computer so I did not post and I am a little tired tonight also but wanted to make sure I posted tonight!! I promise to do better in March!!!
Thursday 28 Feb. 2008- Well it was my 14th straight day of working with Valentine's day being the last day I had off. And I wonder why I was sooo tired??? lol!! It was another COLD night here in Florida and my DS9's practice was 7-8:30 @ night. So again I was the "rockin' momma" when I showed up with a big keg of hot water, cups, and hot cocoa packets!!! They had a scrimmage game with another team and we won. I was concerned that my son didn't swing at any of the pitches and struck out looking. It is not like him to do that so I think the cold affected him. We will have to work with him a little harder!!!
Friday 29 Feb. 2008- Leap day and finally a day off...yeah!!! Today I vegged in bed after I dropped the kids off to school. After I picked them up I went to pick up my paycheck to notice I was shorted $120. I went back in to only find out I was going to have to come back later to pick up another check when they can find someone to sign it....aggghh!!! So after I went back and picked up the check off to the bank I went. Then afterwards we visited my Aunt at her store and dropped off grocery bags for her to use. I picked up some groceries and a box filled with 75 juice boxes for just $17 (5 boxes of cereal, 200 baking cups, pumpkin pie filling, evaporated milk, corkscrew pasta, 2 bags animal crackers, cinnamon honey grahams, a timer, and light bulbs)...gotta love shopping at my Aunt's store...lol
"Date" update- I did not see my friend since but I think my work and his school/work schedule conflict and I am not working at that job this weekend SOOO not sure if it would be happening anyway!!!

Bring on the freeze....
Tonight it is expected to hit below 30 which is VERY COLD for Florida!!! As soon as the sun fell tonight, while we were on the baseball field, so did the temperature. Thank god I am a rockin' momma and I brought hot water, cocoa, cups, and spoons to warm up all those little baseball players. Two parents even dropped their kids off in just a t-shirt and shorts. I was mortified!!! Who does that? Then one parent who did that later showed up with pants and a big coat all bundled up. I felt like saying how about doing the same for your son...ughhh!!!
I spent today setting up my calendar of things by adding in my March work schedule, the baseball schedule, and my doctor appointments!! I also called and made some dental appointments for me and the boys. Now the only thing left is to make my vision appointment and I will be all set!!!! It felt good to complete my MArch calendar of events so far....oh I forgot that I also labeled GP, Rudy, and Turkey days!!! But like I said it was great to look at it!!!

Thunderstorms. Lightning, Tornado watches....
And electricity going in and out...What a day we had today!!!! No we were not part of the BIG BLACKOUT down South but did have our electric go in and out during our storms late afternoon today!! I received my work schedule and I am working about 3 days a week on average and she split the shifts in 2 instead of 3. So I will work a 7 or 6 hour shift each time. She of course messed up ONE shift for me..she scheduled me on Saturday night on the 22nd. First I can't work Saturday nights because I clean the church PLUS it is my birthday so I got hit in a double whammy!!! Hopefully I can do some switch a roos with some coworkers but the way they have been behaving who knows!!! I will keep my fingers crossed and see what happens!!!

Happy Rudy Day
As much as I would normally write about what things I did today for Rudy Day I have some personal thoughts I need to let out today.
Today I was asked out by a YOUNGER gentleman to a dance/party. He knows I have 3 boys and has seen them a few times while they were with me at work. He is a resident at the apartment facility I work for and I don't think there is a policy about not dating residents so that is not the issue. PLUS I don't know my March work schedule yet so I might be working that night anyways. BUT if I am off from work I have a BIG decision to make. I am not sure I am ready to "date" again is my first issue. Then there is the approximate 8-9 year age difference with me being the OLDER one...yikes!!! He is from Venezuela, he works and goes to school. He is very nice and he usually comes in to the gym to visit and talk ALOT more than he comes in to "use the gym". This is going to be a hefty decision to make but I am kind of hoping that my boss scheduled me so the decision is made for me....lol It is avery scary thought and I know it is just a date but I am an old fashioned kind of gal who doesn't want to casual date my life away. If I date it is something I think can go somewhere and I am not sure a 23/24 year old is ready to be a "stepdad" to my already 9 y.o. and 7 y.o. twins if you know what I mean. AND I am not so sure I am ready to date a much younger guy. Isn't that supposed to happen during the mid life crisis era when I would want a younger guy???.....lol!!!
Anyway it feels to good to be asked out to a dance but I seriously don't think I am ready for it!!!

February's FINAL Weekend 2008
Ok now I have four more days of work to complete my 14 days of work streak....Can't wait til Friday!!! So yes you will have to forgive me because this was a VERY busy weekend for me between putting in extra hours at one job, still working my second job, AND missing my boys terribly while they had a fun filled weekend in Tampa.
Saturday began with a soaking...yes you read that right a SOAKING!!! It was pouring out complete with lightning and thunder when I had to leave for work in the morning. By the time I sat in my car my pants were suctioned to my legs and water was pouring down my face as I tried to wipe it off with the now sopping wet sleeve of my fleece jacket. And I had to work seven hours in these wet clothes because the entrance way to my gym was flooded so my pants were soaked at the half way point between my feet and my knees. So when I say a soaking believe me it was!!!! After I came home I rested a little while and then went out to dinner at IHOP with my dad, aunt, and uncle!! Then went from IHOP to the church to clean!!
Sunday began with church, cleaning the church, and a fabulous breakfast at my grandfather's. Poppop's famous waffles were ready and waiting for me when I walked in the door. My Poppop even buttered, syruped, and cut them before I came in...I love him!!! The only thing I had to do was pour on the applesauce!!! Afterwards we went through one of the closets in the spare bedroom. My grandmother hadso much stuff but I found LOTS of new binders and I am VERY excited....lol Anyway I ran out of time and had to leave so I can do the final church cleaning. From there I went to my other job and waited for my boys to arrive. I was sooo excited to see them and they had LOTS of goodies from the Tampa Bay Devil Rays ball club. My poor Travis was sick all weekend but is doing ok tonight. I gave him some cough meds and he didn't have a fever anymore so I am keeping my fingers crossed for a healthy morning because he has perfect attendance right now!!! There has been lots more but I will write more tomorrow!!!

Friday the 22nd of February!!!
Well another work day but more like a work night...lol Today I baked 4 sweet potatoes to have over this weekend while at work and with dinner. I finished most of my laundry (except the bedding) and packed my kids for the weekend with their Grandma and Aunt from NY who are visiting. They will be in Tampa at their Great Aunts condo. I am a little nervous and scared considering my ex MIL tried to fly my kids to NY without my permission around the holidays despite the fact that I told her in October that they were not going. I can't deny the kids and I can't deny my ex SIL, I trust her, it is her mom I am not trusting right now. So right now I am missing my boys but I know they will have a fun weekend and I believe they are going to meet the Tampa Bay Devil Rays baseball team because my SIL has a high school friend who works for them!!!

Okay, I am a little behind but here I go....
Tuesday the 19th- Well let's begin with another day at work. Don't get me wrong glad I am still working but man I can't wait for Leap Day to get here...lol Ronnie had a VERY COLD baseball practice which left me wanting to crawl in my blanket and go to bed....I missed being in chat!!
Wednesday the 20th- Let's see I started off the day at work of course but knew that there was going to be a lunar eclipse and I was babysitting my nephew that I haven't seen since Christmas!!! Well although I did see the lunar eclipse before going to bed, I received a call from my nephews mommy during baseball practice and it was not good news for me. Apparently my brother was in his mad rage and refused to bring the baby to me and to take her to her class. I tried reasoning with my brother but he said some not so nice words and hung up on me. Of course as part of his control I couldn't get back into contact with my brother's girlfriend because he broke her cell phone (again) and she had called me originally on his phone which he now of course is not answering....ughh AND to top it all off I found out from my OTHER brother that supposedly the baby grabbed my brother's (his dad's) cigareete and burned his hand in between his fingers. So I guess he needed to find a reason to NOT let me see my nephew because he knows I will be all over his $hit!!!
Thursday the 21st- OMG can you believe February will be over next friday???? Today was the first of the four days straight of my LONGER shifts at work. It went well even though it rained. I still can't get my brother to answer his phone but when he needs something I know he will eventually call and he will have to be ready to bring me my baby....hehe. So like I said it has been raining today and we did not get a cancellation call so I drive ALL the way to practice to show up and see no one there. Another mom was there and she said she didn't receive a phone call either. What pisses me off most is that with the cost of gas, this was a waste of money and miles on my car....uggghh So since practice was cancelled my son and I stoped off at the grocery store and picked up whole chickens on sale for 69 cents a pound. They only had 2 left so in the cart they went YEAH!!!! I will cook them up this weekend and tear the chicken off, bag them and freeze for dinner next week!!!

Monday the 18th
Today was day 4 of my 14 days of work before my next day off (Leap Day). Today was a good day at work and the boys had a good baseball practice. I am watching the end of Dance Wars and now I am going back to the chat room before they miss me too much...lol!!!

Sunday February 17th!!!
Well despite having a bad day at church today...uggghh I enjoyed another day off from my main job!!! But I know that starting tomorrow I am working everyday til Leap day. Dale Jr. finished in 9th place at Daytona which was a bummer for me but at least he made the top 10!!
I also went to our storage unit to pick up a few things of mine and the boys to see that my brother just threw things to the back of the unit. Everything was tossed to the back and when I sifted through half of it I came across one of my boxes with dishes and heard little pieces fall. Half of my dishes were broken...my day was challenging but it did not defeat me!!!

Crockpot Day
Well considering I am off this weekend from my main job I decided to make the To Die For Crockpot Roast and the Pumpkin Pie Pudding TTR recipes!!! Everything came out wonderful!! I called my grandfather this morning to let him know I was bringing over dinner and he said he was working on the bathroom today. And boy did he...when I arrived he had put down new tiles in the toilet/shower area and was working on the sink area next. So it was the perfect night to bring him dinner!!!
My grandfather, father, aunt, me, and the boys enjoyed the roast with roasted red potatoes, creamed spinach, and shoepeg corn. I even was able to get two of my boys to have it with gravy...which is incredible and the third stuck with his ketchup method...lol!!
The Pumpkin Pie pudding is simply pumpkin pie WITHOUT the crust!! We served it with cool whip and ice cream...very good also!!! Next time I will double the recipe!!

Friday the Fifteenth!!!
What a day!!! I was able to get all my laundry done except for our clothes worn today which I will wash with the kids coats tomorrow!!! I worked the night shift which was pretty quiet tonight. I cleaned most of my kitchen counters and can't wait to attack the cabinets tomorrow!! My day was good and I think these B-12 vitamins are definitely helping my energy level return to what it was.

Okay I am on a roll with this....
well Today is Valentines Day- a day of romance and love. I don't have the romance in my life (and not looking for it) but I have LOTS of love from my three sons!!! They are my heart, without them my heart would not beat with happiness!!! Today we had dinner together before baseball. I made English muffin pizzas and when the kids found out I made them they came running over and hugged me and said "you're the best mommy ever" and those little moments are the memorable ones!!! Imagine English Muffin Pizzas doing all that...lol
I hope everyone had a wonderful day!!!!

February Great Pumpkin Day 2008
Yes that day has come around again and I didn't get much done as far as GP day goes. BUT remember last night I wrote about a coworker who is not so nice well my boss has finally opened her eyes to this girl and I wound up gaining MORE work hours AND my boss is ready to basically either CUT this girl from the schedule or ONLY give her like 2 days a week!!! This girl tried her hardest to either slowly get rid of me or quickly have me fired. I am soooo glad my boss has finally realized that it is not ME who is causing the problems it is the other girl. I feel like a big glob of ugliness has been scraped off my back and now I can stand proudly!!!!
Tomorrow I go in for a sonogram to be tested for PCOS which my little sister has. I have to fill up my bladder with 32 ounces of water an hour before my appointment which is 8:30 in the morning. How the heck am I going to drink 2 bottles of water before 7:30 in the morning....accckkk!!! I know I can do it and of course I have to but still next time I am scheduling my appointment later than that if I have to drink and hold that much in.....lol AND worse yet it is dropping to the 30's here in Florida tonight so you know the second I walk out my front door and hit that cold air I am going to want to pee REAL BAD!!!!!!!
And last and sadly I did not get to watch my nephew tonight :( The mommy realized that her class is next Wednesday instead of tonight....oh well I'll have to wait a week to see him!!

Ginger it's 8:30 and I'm Writing...lol
Okay so today I had to work from 8-12 and deal with the not so cooperative coworker who decided to come in and workout before she relieved me from my shift. She is sooo nasty but I don't want to let her negativity get the best of me. Best of all the "what goes around comes around" theory has definitely worked for me this week. My 3 "lovely" coworkers tried cutting back my hours so that they gain the hours and now my boss revamped the February schedule for the next 2 weeks and not only have I been given the respect I deserve but she changed my shift from 8-12 to 8-1 so now I have the ONLY 5 hour shift each weekday and they all split the 4 hour shifts.....I couldn't be happier!!!! Now I will keep my fingers crossed for the March schedule!!!

Getting Back on Track
Okay Ginger this will be done before 10 pm tonight, heck maybe before 9:30....lol
Now that baseball season has begun for another season my boys and I have to get back on track. This is the hardest time to keep up with a regular routine. I am promising myself and my boys to do my best to keep us on track and not get reckless with take out food and rushing out the door. This will be a hard habit to break BUT I am completely ready and willing to try!!! My boys and I are worth it!!!

Okay I was a BAD girl Ginger!!!
I missed my Daily Write for February 7th, 8th, and 9th!!! BAD GIRL BAD GIRL!!!! So here is a quick review: Thursday night (the 7th) after baseball practice I was quite exhausted and went straight to my room after the boys were all in bed!! Friday (the 8th)well that was my Ladies' Night and boy was it scrumptious!! I had blueberry martini's which are my new fave drink...now I have to look up how to make them...lol!! And Last night (the 9th) well after cleaning the church, hurting my back, and having lack of sleep because I was out til almost 2 in the morning for Ladies night I simply came home and went straight to bed.
Today my back is still hurting. I think I have a pinched nerve or a pulled muscle or something. Last time this happened it took about a week to recover so I am not happy about this!! My work hours have changed at my job so now I am off every other weekend and work 8-3 on Saturdays and 3-9 on Sundays on the weekends that I do work. This is the first new weekend working cycle for me and I am currently at work til 9 tonight!!! I just finished reviewing the sale ads and trying to figure out the menu while factoring in baseball practices and school meetings which changes up "cooking"time!!! I have a feeling my crockpot will be used quite often this baseball season!!! I am off from work tomorrow so I hope to accomplish any necessary food shopping and get dinner started early because we have a school meeting at 5 and baseball practice from 5:30-7:00 so we must eat by 4:30 tomorrow and maybe pack a snack for while at baseball pratice. I am trying to get the boys to eat more "veggies" so I might pack celery with peanut butter for their snack!! Anyways...hehe I am off to find some more crockpot family compatible recipes online and hopefully get to catch some of my friends in the chat room tonight since I haven't been there since Wednesday night!!!!

Fifth of February/Super Tuesday
This is take #3...if I get another problem with this post Gingerbug I will cry!!!
Today is Super Tuesday which is an exciting day for me. I enjoy watching the political process unfold with a good old fashioned vote. The parties both have tight races which makes it EVEN more exciting. I can't wait for all the final results.
On a lighter note Ronnie had his first baseball practice tonight. He was the smallest player there but showed them what a big force he is...lol He has such a natural talent and most of all has the heart and spirit for it. I can't begin to say how proud I am of him. His team is the Rangers and the twins team is the Pirates. I hope they have a fun filled season!!

Fourth of February
What a day!! My third and final child woke up early this morning and was sick all over the hallway carpet following the same unfortunate cold his brothers had in each of the two previous nights. Today was his first absence from school and it was the 100th day of school celebrations today. My poor Trevor. He slept until 1:42 pm and slept atop a pillow on the floor. I tried waking him up a few times to go in his bed and he just looked up at me, grabbed the blanket, and rolled over....lol.
I finally heard from my oldest son's coach and his practice days are opposite the twins which means I have to travel to the ball fields every Monday-Thursday-there goes my gas budget....lol. So tomorrow I will FINALLY meet Ronnie's new coach and new team members. I also found out that Ronnie during tryouts scored very high in points and one of the first ones picked...how wonderful. He is 9 yrs old but the same size as his 7 yr old brothers so to be the smallest kid out there with a bunch of 9 and 10 yr olds and perform so well makes him feel great (and Momma proud...hehe)!! So be prepared I will be writing about his team and practice tomorrow but later on at night because practice is from 7-8:30 pm. He is sooo excited as am I ....yeah!!!

Writing Daily 2008 Challenge
Gingerbug is at it again at MHH (magicalholidayhome.com) . She is challenging us to write a little something everyday and I am crazy enough to join in on the challenge!! So today I am still recooperating from my cold that began on Wednesday (4 days ago) and watching the Giants play in the Superbowl !!!!
Baseball season is about to begin for my boys with ther first games scheduled March 3rd and an Open House event on March 1st. We began practices with my twins team but haven't heard from my older son's coach yet so I don't know when his practices will be held yet. We absolutely LOVE baseball and to see my boys play baseball is even more exciting!!! The only downfall is that our weeknights are generally consumed and our dinners become less healthy with take outs and stadium foods!!! I am going to try my hardest to set up crockpot meals that the kids will eat. Being that my boys are sooo picky I don't know how successful it will be BUT at least I will try. I also want to set up snack bags with carrots and celery(with peanut butter) for them to snack on when they are on the bench!!! Wish me luck this season!!!

Test it, Taste it, Rate it 2008!!!
Wow can you believe another year has gone by SO quickly? Well as we all begin to prepare to Jumpstart into January we tend to reflect on what we didn't get done and would like to get done in the new year!! For some of us it includes downsizing, organizing, and budgeting. When I started to organize I realized I was left with PILES of recipes that have never been tried and I know I am NOT alone. So this year kicks off the first ever (voted by our members) Test it, Taste it, Rate it (TTR) Challenge At the end of each year we are graced with Halloween, Thanksgiving, and Christmas. So we delegate a day for each month to bring us closer to our goals.
GREAT PUMPKIN DAY (GPD) is celebrated on the "last day" (30th or 31st) of each month.
TURKEY DAY (TD) is celebrated on the fourth Thursday of each month.
RUDOLPH DAY (RD) is celebrated on the 25th of each month.
These days have become our Test it, Test it, Rate it Days!! Being that all three of them generally fall within the same week I have chosen the 13th as "my" GPD (31 backwards and spooky superstition number...lol). This way I can break up my month a little easier budget wise with ingredients. Each month will feature a category of recipes. Three recipes will be featured that fit that particular category. The monthly categories featured will be as follows:
January- Main Dishes
February- Crockpot
March-Breakfast
April-Desserts
May-Sides
June-Breads
July-Appetizers
August-Drinks
September-Snacks
October-Freezer meals
November-Soups
December-Mixes
All recipes will be posted on the FIRST of the month in HOLIDAY COOKING so you have time to plan and prepare any or all of the recipes. If there are any particuar recipes you want to try in any of these categories please PM me so we can do our best to incorporate them. Always make sure to credit the original source of any recipe shared here at MHH.After we are done with the recipe we will be sharing what we thought in a Tested, Tasted, Rated post each month throughout the year!!! I look forward to a MAGICAL and GREAT 2008 with all of you!!!

2007 in a Nutshell!!
Ronnie turned 8 in January, I turned 31 in March, and the twins turned 7 last friday and that's just the start. The boys played baseball and did very well. Ronnie made allstars but in the tournament they fell. Baseball season came again in the fall,Ronnie moved up to the minors and played real baseball. Trevor and Travis had a graduation from Kindergarten and boy are they smart, they were top of their class complete with gold tassels, what a great start!!Then August came and moved up they did, from first grade and third went my three kids. The first of December came around with new friends-our elves Taffy, Tandy, and Rishi arrived in a little red sled!! They came from the North Pole and had a long flight and we wake up each morning with a mischievous delight. They climb on our counters and bring us little gifts, On Christmas Eve they leave with the jolly St. Nick. So as you can see our lives have been filled with fun, Merry Christmas to your family each and everyone!!
